So now what I need to do is get the wok nice and hot.

And then give this a good swirl. Then, very, very quickly, in with the ginger.

Now the wok is still hot, so very quickly I'm going to add in the shitake mushrooms. And then give that a good stir.

So, wok lovely and hot. In with some groundnut oil. About a tablespoon or two.

Oil in. Once it's nice and smoking, in with the egg. Now I'll just swirl this around a little bit.

We need to give the wok a quick rinse and then I'm going to prepare the chilli. As well as the chillies, chop up a small bunch of coriander.

In with a little bit of oil, and now with the chillies. Let's throw these little ones in first. And a bit of these, and the beans.

Oh my God, this is amazing. Which is why I keep an omelet pan in the trunk of my car.

So let's start this race against my fresh, easy version by putting the kettle on. Gonna get the wok nice and hot.

Back onto the wok, now. So, I'm going to heat the mushrooms, and it's going to be cooking in the oil that's had all the flavors from the meat.

Fantastic. And then for fragrance and smokiness, some bacon, just diced. Wok on, oil in.

And then I need a hot wok. Crack the crab claws but leave the meat in the claws. Roughly chop a chilli.

You know when the wok's hot enough, when you start to see a little bit of smoke just coming off the surface of the oil and sometimes you can see the oil glisten as well.

Now to cook the marinated beef. Wok on, oil in. Wok is ready. It's smoking. In with the beef.
